Depending on your needs, orders for menus should be placed one of several ways.
If there are more than 4 pages (that is, sides of a sheet), you will most likely want to place the order as a stapled booklet or a spiral-bound book. Page numbers for booklets go in multiples of four; books can be however many pages you want. Lamination may be a good choice for your menus to ensure maximum life span and durability.
If there are four pages, you should place the order as a standard 8.5" x 11" or 11" x 17" copy with a half-fold. Count the page number as two in this case, even though your file may be four pages, since each full side of a sheet is priced as one page.
For take-out menus or small sandwich-shop-style menus, you may want to go with a single sheet which is simply tri-folded. This would give you six panels of roughly 2.8" x 8.5", double-sided (or 5.6" x 11" if you tri-fold an 11" x 17" sheet).
